"Toona" Sandwich

Both my cameras have gone kaput, so unfortunately, I haven't been able to post any pics lately.  Regular tuna never set well with me, due to acid reflux, I hated tasting it 9 hours later.  Sorry for that visual, but I love, love love THIS version.

Mash chickpeas with a fork
add relish
fresh chives
salt and pepper
kelp flakes
dill
and a light dollup of veganaise

Place on toasted cracked wheat sourdough.

My New Fave Salad Dressing

This is my new favorite salad dressing.  I usually make a salad of romaine lettuce, garbanzo beans, chopped pepperoncinis, fresh chives and top with this dressing.  Drew's Greek Olive, sooooo good!

Bleh!

So, I thought I would try a new sour cream alternative-it was even more expensive than tofutti-but thought I would try it.  I like Tofutti okay, but it has a slightly odd flavor, so saw this at the local co-op and was hoping I could find something that was even better.   First off, the smell is a little off putting and the taste well, just awful.  It tastes like play-dough.  I'm glad I just tried it plain and didn't ruin any food with this awful stuff. So, four dollars down the drain.  Think I will either go with Tofutti brand or go without.

Daiya

I have been hearing a lot of rave reviews on different vegan sites around the blogosphere singing the praises of Daiya cheese.  I got excited when my local co-op started carrying the stuff and tried some out on pizza.  I tried the cheddar style shreds, and after baking, it seemed to turn into a big gluey mess.  I didn't particularly care for the flavor either and ended up just scraping it off my pizza.  I also tried it plain and I am pretty sure I won't be buying this again.  Not sure if the mozzarella style would taste any better.

My New Fave Breakfast

I discovered Peanut Butter and Co.'s Dark Chocolate Dreams peanut butter.  This stuff is amazing.  I put about 2 TBS in my oatmeal in the morning and stir, add a drizzle of agave, cinnamon, and soy milk.  Sometimes I may add a TBS of ground flax.  I could eat this every morning.

Baked Red Potatoes with Lentil Chili

Sorry, I don't have a pic for this, but it was extremely delicious.

I baked some red potatoes in the oven and topped with a quick lentil chili.

For the chili I took 4 cups of water mixed with about 2 Tbs of "chicken" broth powder, added fresh garlic and red onions and 1 1/2 cups of rinsed uncooked lentils. For the spices I used chili powder, cumin, cayenne and coriander. Let it come to a boil and simmer until the lentils were almost done and added a can of rotel.

I topped my potatoes with the chili and for the vegetarians you can add sour cream and cheese and vegans add your favorite vegan cheese and sour cream substitutes. I forgot to put salt and pepper in the chili, so I topped my potato with these, some fresh red onion and sliced tabasco pimento stuffed olives. So good. I ate too much.
